3 bananas, mashed
¼ cup coconut oil, melted
½ cup coconut flour
1 tsp baking soda
1 tsp vanilla
Preheat oven to 400 degrees. Put all ingredients in medium sized bowl and using a strong whisk, mix until smooth and well incorporated. Put into lined muffin tins. Batter will be somewhat thick. Bake for 13-18 minutes until lightly browned and set in middle. Let cool on bakers rack before removing from pan.

Whenever given a recipe, I like playing with the ingredients and the process to ensure a great end result.
Mix the baking soda in with the mashed bananas…mix well.
This is another recipe where you do not need electric kitchen equipment to create. Just make sure you completely blend the ingredients together
I have used this recipe to make banana bread and banana cake squares. The bread will need a little more time but just keep an eye and check by inserting a toothpick or cake probe into the middle to ensure bread is thoroughly cooked through.
